I suspect the transmission talks to the engine via a bus system, so separating the two could turn out to be a lot more complicated than just spoofing inputs to the transmission ECU. While there is no problem running a cat with carbs if the fuelling is correct, the reason why injection is universally used is because it's hard to get the fuelling right with carbs. Probably even harder for an amateur. Dispensing with the cat is not on because it will be checked in the MoT if the car was originally fitted with one. The way I would go would be to make the system look like a Voyager and you would have to find a way of talking to the bus. I had a Citroen C5 with about 19 ECUs and a bus system and the only way I could do anything with it was to buy a Chinese knock-off version of the official diagnostic kit. It cost me £85 and I could use my laptop to read and configure everything on the car, and indeed on any modern Peugeot or Citroen from about 1996 to the present, it was impossible to do anything with it otherwise. The Voyager is a much less common vehicle, but it may be worth while searching the internet and all the relevant forums to see if anything like that is available.

You might, but it wouldn't be compatible with the automatic transmission.

A quick google shows them not introducing CAN bus on to the voyager runtil 2007 so some further research may be required.
Understeer: when you hit the wall with the front of the car.
Oversteer: when you hit the wall with the back of the car.
Horsepower: how fast you hit the wall.
Torque: how far you take the wall with you.

I have found a much cheaper, faster, safer, more comfortable, more practical solution that is from the GM family V6 powered and automatic:
